Seaweeds are known to have a diverse flavor and nutritional profile. They are good-impact foods that can be cultivated without land, fresh water, fertilizer or pesticides. Instead, their cultivation helps our fragile ecosystem regain its balance. So why haven't we made its thousands of species an integral part of our diet yet?
This session is about how we can use the potential of seaweed to develop more sustainable foods for the future. Whether we use it in alternative products or as novel ingredients for the food industry - I think this could potentially feed our growing population!
